Ingredients
- splash of olive oil
- 2 cups of chopped cauliflower
- 1-2 cans of canned garbanzo beans
- 1/2 white onion diced
- 2 cups of diced tomatoes either canned of fresh
- 2 cans of coconut milk
- 1 tbsp onion
- 1 tbsp curry
- 1 tsp cumin
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- a squeeze of lime
Instructions
- Heat olive oil in a skillet on medium, wait till hot then add in your chopped onions
- Once your onions are slightly browned, add in your garlic, cauliflower and a splash of coconut milk. Cook for a few minutes.
- After a few minutes add in your dry seasoning and the rest of your coconut milk, tomato and garbanzo beans
- Turn your burner to low and allow your curry to cook for a about 15 min.
- Once the curry is at a good consistency splash your lime juice in there, give it mix and enjoy
