Garbanzo Bean Cauliflower Curry

  • splash of olive oil
  • 2 cups of chopped cauliflower
  • 1-2 cans of canned garbanzo beans
  • 1/2 white onion diced
  • 2 cups of diced tomatoes either canned of fresh
  • 2 cans of coconut milk
  • 1 tbsp onion
  • 1 tbsp curry
  • 1 tsp cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • a squeeze of lime
  1. Heat olive oil in a skillet on medium, wait till hot then add in your chopped onions
  2. Once your onions are slightly browned, add in your garlic, cauliflower and a splash of coconut milk. Cook for a few minutes.
  3. After a few minutes add in your dry seasoning and the rest of your coconut milk, tomato and garbanzo beans
  4. Turn your burner to low and allow your curry to cook for a about 15 min.
  5. Once the curry is at a good consistency splash your lime juice in there, give it mix and enjoy
