Ingredients
- olive oil (for cooking in skillet)
- 8 oz (approximately 2) fully cooked smoked sausage links (cut into 1/4 inch thick discs)
- 1/2 white onion (diced)
- 1 tsp paprika (smoked would be preferred)
- 1 tsp cracked pepper
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp garlic powder
- 1 1/2 cup chicken broth
- 1 cup white rice
- 1 can diced tomatoes
Instructions
- Heat olive oil in a cast iron skillet on medium heat (~12 inch sized)
- Add in sausage and heat for 5 minutes, slightly browning the edges.
- Remove sausage and set to the side.
- Add the diced onion to the skillet and cook for 5 minutes, until soft.
- Add in spices and sausage back into skillet and stir for 1 minute to coat evenly
- Add in diced tomatoes, rice, and chicken broth and stir to mix well.
- Increase heat on skillet to bring the liquid to a boil. Once a boil has been reached, immediately reduce heat to low and cover for 20 minutes.
- After 20 minutes, remove from heat and let sit, covered, for 5 more minutes.
- Gently stir skillet to fluff the rice before serving.
